Are these the default PC keybinds?

Yes. Each game shows its default keyboard and mouse controls, sourced and dated. Most PC games let you change them in their settings menu.

Do the keys change on an AZERTY or QWERTZ keyboard?

Games bind physical key positions, so WASD on a QWERTY keyboard is ZQSD on an AZERTY one. Each game's keyboard map can be switched to your layout.

Can I use a controller on PC?

Most PC games support an Xbox or PlayStation controller with the console's layout. See the Xbox and PlayStation pages.
